Thi is not an authentic tabouli, by any stretch. Normally, tabouli is mostly parsley with a little bulgur tossed in. I used quinoa and planned to eat it as a main lunch course, so I used more quinoa than parsley. I also left the olive oil out so that I can measure it per serving for Weight Watchers.
Quinoa Tabouli
1 cup quinoa
4 cups water
1 bunch parsley, finely chopped
2 tomatoes, diced
juice from 1 lemon
Salt & Pepper to taste
Olive oil for serving
Rinse quinoa well under running water. Bring 4 cups water to a boil. Add quinoa and simmer 15 minutes, or until done. When soft, drain well and transfer to a bowl. Fluff with for and put in the refrigerator to cool.
When quinoa is cooled, add remaining ingredients and mix well. When serving, drizzle olive oil over the top.
